In Honor of Cinco De Mayo... I was planning to make Tacos...

Well that plan fell thru... we all ate a snack too late in the day and weren't hungry... so we'll have tacos tomorrow.

Meanwhile, I bought some Chorizo and have no idea what to do with it...

It's the fresh kind, that you have to cook... I was thinking of using it with the hamburger to make the taco meat...

What do you all think?

Chorizo mixed 50/50 with ground beef makes a really excellent meat base for red chili.

Down here in south texas we fry it with eggs and serve it on hot flour tortillas..yummy breakfast tacos. I hear there are 2 types of chorizo though. down here they sell the one that is more of a crumbly ground texture. Ive seen some that has to be chopped or sliced but never have used that kind.

Cook the chorizo and some scrambled eggs, drain off most of the chorizo grease and fry some potatoes in the rest, grate a bunch of cheese, roll it up in a tortilla with some salsa and you have the best breakfast burrito ever!

I bought the Chorizo that is "fresh"... Not like a cured sausage, but like Italian Sausage or Breakfast Sausage that has to be cooked somehow...

Browning seems to be the preferred method.

Well... I made my tacos today...

The chorizo didn't break up as well as I had hoped... it's not like hamburger, that's for sure.

So I had big chunks of chorizo mixed with very broken up hamburger.

But it all tasted good.

The chorizo wasn't as spicy as I'd have thought... I think I'll find a different brand next time.
