Holy Cupcakes and Muffins Batman!

One of the things I've been doing this year is making muffins every week for DSS to take in his lunch. They aren't allowed to bring cookies or sweet stuff and nothing with nuts in it. I decided that muffins are healthy and sweet so I'm making them every Monday morning.

This muffin project led to me volunteering to make 11 dozen cupcakes for my IL's anniversary party on Saturday. I spent all day baking 5 different kinds of cupcakes to address all the weird and actual dietary needs of family. Tomorrow I get to frost all those cupcakes.

Today I baked Gluten Free Vanilla Coconut cupcakes, Coconut Cupcakes, Cherry Coke Float Cupcakes, Lemon Cupcakes, and Cranberry Orange Cupcakes.

At least cupcakes are easy and quick to make. I now have boxes of cupcakes stacked in my laundry room since that's the only place I have space for them all.

Tomorrow I'll be up to my eyeballs in buttercream and cream cheese frosting.

I will post the Cherry Coke Float recipe this weekend.

I have written on the box what kind they are and I'm printing little bifold signs for the tables.

Today I frosted all those cupcakes. Everything from scratch. No box or store bought frosting. I used a lot of butter and powdered sugar today.
