Wow. I have a feeling you're going to be sorry you asked!

I have a lot of "rules" for sandwiches:

1) Mayo on the side with tomatoes or bacon (sometimes chicken or turkey, if there's no bacon or tomatoes.)

2) Mustard with ham, unless there is a need to apply rule #1.

3) Never, EVER mayo touching ketchup. (<<<pet peeve)

4) Mustard, ketchup, and pickle on the bottom bun of a burger.

5) Never Miracle Whip.

So, if I'm having an old fashioned burger with lettuce, tomato, onions, pickles, mustard, ketchup, and mayo, from the top down, it looks like this:

Bun

Mayo

Salt & Pepper

Tomato

Lettuce

Onions

Burger

Pickle

Mustard

Ketchup

Bun

So, the order of ingredients in a sandwich is something that I'm OCD about and something that I take a lot of crap about, but I think it has a tremendous impact on the overall flavor.

ETA: Never mayo touching cheese, unless it's Swiss or provolone.

I'm sure I have a thousand rules, but I can't think of them all right now.

It all depends on the sandwich, and the sandwich maker, but I don't even have miracle whip in the house.

When DS21 makes sandwiches, he tends to make some sort of mayo-based, seasoned spread. It's usually very tasty, so I try to get him to make the sandwiches.

If it's me making my own sandwich, usually I'll use mustard, but sometimes add mayo. When I make an Italian sub kind of sandwich, I'll use Italian dressing or oil and vinegar, too.

For my Thanksgiving leftover turkey sandwiches, I toast the bread so it gets some butter. Then I also spread cranberry sauce on the bread.

One of my favorite condiments I ever made for a sandwich was actually a spread.

(It's a sad story, actually, so I haven't made it again, but I will. Waywardson's co-manager's W had cervical cancer (at age 27). We knew how sick she was, so I had time to plan what I would send to the family.)

I made a Schlotzky's-style bread and topped it with turkey, swiss, and a tangerine-rosemary cream cheese spread. That was awesome!
