Eggplants!!!

What do I do with them?

Any recipe ideas out there?

Hmmmmmm...

My absolute favorite eggplant dish is called Chicken Melanzana and it's basically a chicken Parmesan with an eggplant layer and the two are bound together by an herbed ricotta and topped with Mozz and sauce. Nom!!

Or you could try an Asian eggplant dish.

Very simple - cut them in half, rub a generous amount of olive oil and spice (curry powder, garlic, whatever you got) and roast.

Ser... roasting seems like the way to go!

Been looking at roast veggies recipes.

I also have... Yellow squash, Zucchini and small red potatoes...

I could roast them all...

You can make Eggplant lasagna with them. I've done it a few times and Do3K will actually eat it (and he's the pickiest person I know ).
