Thanks alot Dr. Phil. There are 19 more days until Mardi Gras and you are already dressed up reminding me that I have to start prepping for the massive amount of cooking necessary for making Cali feel like New Orleans.

Cafe Dumond beignet mix- check. Red beans and rice fixins- on the list. Pralines ingredients- check. King cake ingredients- on the list. Rememberin' to check the Parade Cam- written on a sticky placed on my monitor. Kermit Ruffins CD- in the home stereo.

Just a reminder, Krew du Vieux rolls Saturday at 18:30.

Dr. Phil was doing me a favor. We agreed that dressing up early for Mardi Gras might confuse Mother Nature to end winter early. Or we could get the predicted 8 inches of snow tonight.

I do mix my own seasoining blend. I must confess that I use my buddy's hand made hot links because I have trouble getting real andouille out here in avocadoland.

There is an evil aisle at the store that has "red beans and rice" mix, canned "roux" and packaged "polenta." I wince everytime I walk by the shelves overflowing with apostates.

I have to say I used to always make my roux, but once I was in a hurry and bought a jar of Savoie's.... There's no going back once you cross over to the dark side. It's too easy and it doesn't make the whole house smell like roux.
