Google southern living banana nut bread. Very good.

The recipe thread is locked, so here's the Banana Nut Bread:

1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt

Sift these 4 ingredients together in a bowl.

In a separate bowl cream:
1/3 cup shortening (I use coconut oil or butter)
2/3 cup sugar
Then add 2 eggs, 1 at a time to the creamed sugar/shortening. Add flour mix to the shortening mix gradually, making sure it's well mixed after each addition. Add 3 mashed bananas, (they should be very ripe) and 1/2 cup chopped nuts (I like pecans or walnuts).

This makes 2 standard loaves.

Bake in a preheated oven @ 325deg F for 1 1/4 hours.

I'll have to track down an extra loaf pan... Or use my mini ones... I guess I can use the mini ones...

Thanks again.
