hey, everyone!

BoB, I'll PM you my Gumbo recipe! You can compare w/ Veritas. I used to make the roux, but I don't bother anymore & know what? It tastes even better w/ LESS calories, too!

I have not heard from my N & feel a bit unsettled...but, I'm rolling w/ it.
he's probably super ticked off that I called his daddy up over the holidays & had a nice convo w/ him.

I don't even know what gumbo is!! It's all fish and chips over here!!

On a serious note, best of luck tomorrow Cerise. Keep your cool and remember everything he says to you is meant to make you loose your cool. Don't give him the satisfaction.

The advice on here that I have received over the last 24 hours has helped me enormously. You truely understand.
I know that when I am explaining things to people I must sound as insane as the freak. I have one friend whose mother has npd and I can say things to her and she gets it. It is hard for people to understand when they have never experienced living with a lunatic. It can make you feel quite lonely.

I started writing up the gumbo recipe and it got SO LONG! Anyhoo, gumbo is basically soup that has either roux, okra, or file as a base/thickening agent. If it doesn't have those things, it's plain old soup.

This guy, I think, sums it up best.

Plus he's got some good recipes. He is also something of a chef, so if his recipes call for stuff you don't normally use (homemade stock, etc.), just substitute with store-bought stock, or plain old water.

I have spoken with two attorneys and they have both told me that based on what Child Welfare has found, the fact that Asshole refuses to pay for services I obtain, the hole PhD situation, and the emails, I have more then enough to modify custody and get the shared parenting clause removed.

It is not about taking away visitation at this point it is about allowing me the rights as a mother to take care of my children. I am on the warpath. I cannot get my Austistic son services because of the bitch PhD and her envolvement, SHE REFUSES TO RETURN MY CALLS! THAT IS UNACCEPTALE. That alone is not in the best interest of my children.. unethical and flat out WRONG... This bitch is going to hang! That is why I need the sites, the resources, the knowledge.

Dang I think I will become a lawyer!!!!!!!!

Veritas, I'm drooling again !!! I spent some time in the south and I liked it. I liked the accents (Rrrrrrr... LOL.) I though it cool all the brunetts compared to all the blondes where I reside these days. It's interesting the mix of influences towards NOLA. SO much stuff !!!

I feel you. I wasn't speaking to you specifically on that; just making the point that unless you can get Numbnuts discredited (and it looks like you can), the courts usually consider folks equal parents. It's sad, but that's the uphill battle that some folks have to fight.

One was a site about rights of parents for children with disabilites, child advocates etc.. I need sites that give me info on child custody laws. Where are my glasses going to be a long day of reading

Thanks! I am very leary about the judicial system... and I am going into this with a stiff upper lip, stong hold on reality and the knowledge that I am trying to do what is right for my children as well as myself. I know it will be a long, tuff and sometimes sad road ahead, but this WILL happen and what the Judge decides, well I will have to live with it either way, but at least I am trying.

Alright, you gumbo lovers. Here is my FAMOUS gumbo recipe.

Make your roux.
1 Cup of oil
1 Cup of flour

Cook on medium heat stirring until chocolate brown color.

Add:

1 1/2 Cups Chopped Celery
1 1/2 Cups Chopped Green Pepper
1 1/2 Cups Chopped Onion

Simmer until tender

Add 6 Cups of water to mix and 2-3 whole bay leafs. Then add 1 tsp salt and 1 tsp rustic rub. (cajun seasoning or blackened seasoning)

Add (I always use chicken breast, but you can use whatever) 3-4 skinless / boneless chicken breast cut into small pieces. Raw.

Brown 2 packages of sausage. (I use Johnsonville Italian Sausage) and cut into pieces and add.

Simmer for 1-2 hours. Add okra the last hour if you like. Salt and pepper to taste and serve over rice.

Okay, here is the Dreamlife Gumbo recipe which I have whittled down to be very fast & tasty!

I take a big heavy pot & lightly brown chopped onions & garlic in olive oil. Add chicken pieces ( I prefer legs or thighs as I find chicken breasts way too dry & bones give it *flavor*), add 1 can diced tomatoes, about 8-10 baby carrots, & 1 can chicken stock to cover. I add 1 T. of Italian Herbs & simmer, covered, till chicken is falling-off-the-bone tender.
(At this point, it can be cooled & refrigerated so the chicken fat can be skimmed off.)
When/if the fat has been skimmed, add several cut up bell peppers, *hot* sausage links sliced up to taste, chopped frozen okra, & prawns/shrimp, craw dads, pieces of cat fish, & Dungeness crab, *including the yellow tasty *crab butter*.

Simmer slowly & the fragrance will make a Mardi Gras out of your home.

Be sure to play some Cajun music LOUD & have Uncle Ben's rice all steam-cooked and/or Pilot crackers handy when you ladle the Gumbo into big bowls.

Leftover gumbo is even better ...& I've had great "gumbo" with a few turkey pieces added, too.

To me, its a rich stew redolent with chicken/seafood/hot sausage & pulled together with tomatoes, okra & bell peppers.

Bon apetite, everyone!

*I don't add celery though you can...am not fond of it...& no one even misses it or the file or the roux.

ETA: That old-fashioned thickener agent AKA Gumbo File, is a known *carcinogen* & people have been greatly discouraged from cooking with it.
I never liked it. Okra serves a a great thickener!

Gumbo is just a very personal *choice* of what a person likes.

I didn't make the Gumbo yet but I did improvise a Thai Cabbage Soupy Stew thing. It's GOOD. Any coming over?

Also got the CPS report back. It's stated all over it that it's confidential, so I'll stay off of details. It did reinforce all that has been documented and said. No action at this time, just notification. Any comments? Things I should be aware of? Thanks.

BoB, thanks! I like the way you look at things. Makes me feel much better. I mean, so what if I just went into the kitchen to get a garbage bag and came back with a fudgecicle instead?! That's way better than going for a fudgecicle and coming back with a garbage bag!
