First Happy Easter to all..and Happy Spring. Its chilly here but finally not **cold**.

Via my floating dominican coworker. Big thank you to him.

For family of four...or if you eat big, three servings.

3 green plantains
1 yellow plantain.

Cut off tips of plantain and slice the peel length wise on opposite sides. Be careful not to cut too deep. Just 1/8 of an inch or so. When you peel the plantain (green) run it under cold water as you do it as the peel comes off easier. If you find reminance of peel use a potatoe peeler to remove.

Boil warer and salt.

Cut peeled plantains length wise then cut across into 1" chunks.

Dump in water.

When soft drain off water but retain some. What I did was leave 1/2" in pot and pour a cup of water into a liquid measuring cup.

Add 1 tbs of butter (not margarine). A lot of people use olive oil but I like butter. Mash. Add liquid from boiling water as needed. You want it like mashed potatoes.

In a pan sautee thinly sliced red onion in olive oil and red wine vineagar til soft.

Cook up some thinly sliced salami (today I used costa rican sauchicha and bacon). Cook/fry.

A couple "fried" egg (egg over hard...over easy...whatever).

There is a special cheese for frying. Slice that up and fry it in a pan.

On your plate put some mashed plantain, top with red onion and some of its liquid. Then add egg, cheese and meat.

Yummmm

Finally the right recipe.

Ah forgot as you mash and add butter also add salt to taste.

I love mangu!!! Although fried eggs with chorrizo and french fries was my breakfast fare growing up. Not quite Puerto Rican on either count but so delicious.

That sounds good, tho. Yum.

I grew up with chorizo and eggs.But the type of chorizo we used coated the eggs like a sauce, it wasnt like a sausage type that we get on the east coast.

My kids prefer pinto with fried eggand natilla.

I love breakfast.

Now to conquer sancocho (not breakfast) and juevos rancheros austin style.

...sancocho...I'm drooling right now. If I wasn't so darn lazy I'd make some lol. But if I'm honest I am craving pasteles and I am waaayyy too lazy to make those.

I had to google pasteles...similar to tamales but the masa is made with yautia (yucca?) And plantain?! Seriously yummy.

When I went to visit my friend in the bronx, this lady was selling this...well, its liuke a sweet cream corn. Its been awhile since Ive had it...like 8 years.

Im hungry. Where Im at there is no dominican or puerto rican food. Well, one place, but its not so good.

Im hungry, now.

My friend is venezuelan and she makes something called arepas. I can make it (she taught me) but it tastes better when she cooks them. Sadly she now lives in Florida.

Im hungry now.

Did I say I.was hungry?

Lmao arepas are seriously good. I want some lechon though but it has to come from PR lol.

Yautia is different from yucca and besides maza I only use it to make mondongo....mondongo reminds me of mofongo...now I want mofongo...I'm hungry
