When the recipe calls for 1/2 cup chopped nuts... do they mean measured after being chopped or prior to chopping???

Anyone else have a dumb cooking question?

I'm voting for "after" chopped. That's how I read it, anywho.

Here's my question - parchment paper is great and all but I have this phobia that it's leaching leftover sulfuric acid onto my food? Hypochondriac?

Another vote for after, jrc.

Jrazz - there are all-vegetable parchment papers that are made without silicone. I get mine at the local grocery co-op, but I'm sure places like Whole Foods carry it as well. We just don't have Whole Foods anywhere near here.

1/2 c chopped nuts means 1/2 c of nuts after they are chopped.

1/2 c nuts, chopped = measure 1/2c nuts and THEN chop them

Freshly grind the wheat berries for your flour. It's best used within 72 hours of grinding. Otherwise you can bake a brick with it!

I'm torn.
I love the ability to find that item I can't get at the local Kroger.

But then I want to buy/make everything else when I get there and my paycheck needs to go to HEAT for the next 2 months while this Polar Vortex hangs round.

There's a place here called Holiday Market that has all kinds of stuff but it took me 30 mins just to preview it and I didnt even buy anything.

BR, my sister has this book called the Bread Makers Bible or something like that. I was just looking at it last week and it had a section on this very thing. It said you want to use something called "vital wheat gluten" which helps it rise and keeps it fluffier. You are basically adding more gluten to the flour.
Here's is an article that talks about it. I haven't used it, but my sister has. I just asked her and she said the regular grocery store carries it, it's not expensive and it works really well.
