2 cups of fruit
2/3 cup sugar
1 cup water
2-4oz fresh ginger, peeled(optional)
Combine the ginger, water and sugar in a small saucepan over medium heat.
Bring to a simmer and reduce heat to low. Allow the syrup to simmer for about 10 minutes, stirring occasionally. Remove from heat and cool.
Put syrup into a blender with the plums (discard ginger if you prefer). Blend until smooth, then pour into popsicle molds. Freeze until solid.
(The original recipe calls for peaches, but plums would work too, I think).

I just noticed that you don't like to use a lot of sugar. You can reduce the sugar in the popsicle recipe to taste. If the plums are fairly sweet on their own, you may not need any.
