I spent all day harvesting half the tree, chopping out the pits. i made 4 plum-blackberry crisps and froze a lot of plums. i put plums through a blender and poured the mixture on to sheets and I'm dehydrating into fruit leather. i called neighbors to give some away.

What else can I do with plums that doesn't involve making jam? I'm not into sugar. Ideas? These re Japanese - like Santa Rosa variety.

Plum popsicles

2 cups of fruit
2/3 cup sugar
1 cup water
2-4oz fresh ginger, peeled(optional)

Combine the ginger, water and sugar in a small saucepan over medium heat.
Bring to a simmer and reduce heat to low. Allow the syrup to simmer for about 10 minutes, stirring occasionally. Remove from heat and cool.

Put syrup into a blender with the plums (discard ginger if you prefer). Blend until smooth, then pour into popsicle molds. Freeze until solid.

(The original recipe calls for peaches, but plums would work too, I think).

ETA:
I just noticed that you don't like to use a lot of sugar. You can reduce the sugar in the popsicle recipe to taste. If the plums are fairly sweet on their own, you may not need any.

I have no ideas what to do with plums... but if I lived closer I'd take some off your hands....

Especially the plum-blackberry crumble.

Arg! Fruit leather stuck to the parchment paper after taking 2 days to dehydrate. What a PIA to scrape into rolls.

I gave away a basket of plums and got 6 big cucumbers. i want to make bread and butter pickles. More chopping ahead...

Ah abundance. So much work!

Oh my gosh, one of my aunts used to put plums in Mason jars & pour brandy on them. I don't know the exact process, don't know if she did a water bath or what, but oh my, those things were amazing a couple months later. Wow, I haven't thought of those in years...
