How can it be 65 degrees outside this morning, yet my AC is kicking on (set at 75)?

Because your house retains heat inside and doesn't cool off as fast as the outside.

If you opened your windows and let all that coolness in, your house would cool off and no a/c.

What's the indoor temperature, especially near the thermostat?

Can't open windows due to unfoundling#2's allergies.

The thermostat reads 75. It's in a hallway that doesn't get direct or even indirect sunlight.

It didn't kick on last night after the sun went down, but this morning it's running .

There are things in your house that create heat- the fridge, the tv, electronics, a running dryer, people, etc. If it's closed up then it could be holding the heat in- especially if the temp outside isn't much below the temp inside.

I don't know what kind of thermostat you have, but check to see if you have a humidity setting. Mine was running overnight to the point of being cold in the AM. Called the A/C guy and discovered the humidity setting.

Mine is a touch-screen digital. See if you have a "more" setting at the bottom and keep hitting that until you get to the humidity setting. I set mine to 60% and that seems to work.
