First Happy Easter to all..and Happy Spring. Its chilly here but finally not **cold**.

For family of four...or if you eat big, three servings.
3 green plantains
1 yellow plantain.
Cut off tips of plantain and slice the peel length wise on opposite sides. Be careful not to cut too deep. Just 1/8 of an inch or so. When you peel the plantain (green) run it under cold water as you do it as the peel comes off easier. If you find reminance of peel use a potatoe peeler to remove.
Boil warer and salt.
Cut peeled plantains length wise then cut across into 1" chunks.
Dump in water.
When soft drain off water but retain some. What I did was leave 1/2" in pot and pour a cup of water into a liquid measuring cup.
Add 1 tbs of butter (not margarine). A lot of people use olive oil but I like butter. Mash. Add liquid from boiling water as needed. You want it like mashed potatoes.
In a pan sautee thinly sliced red onion in olive oil and red wine vineagar til soft.
Cook up some thinly sliced salami (today I used costa rican sauchicha and bacon). Cook/fry.
A couple "fried" egg (egg over hard...over easy...whatever).
There is a special cheese for frying. Slice that up and fry it in a pan.
On your plate put some mashed plantain, top with red onion and some of its liquid. Then add egg, cheese and meat.

Finally the right recipe.
Ah forgot as you mash and add butter also add salt to taste.
