Eating it cold for breakfast--and not feeling the least bit guilty! Mmmmmmmmm.....it's like a smoothie.

Simple. Saute a small white onion in a tablespoon of butter over medium heat until softened but not browned. Add 1 1/2 lb. of peeled cubed sweet potatoes and 3 peeled, cored and cubed bit-too-ripe pears. Mix and cook 2-3 minutes. Add 3 cups chicken broth. Bring to a boil, stir, reduce heat to low and simmer 20 minutes. Let cool a bit and zap in a food processor until smooth. Serve hot or cold. Add 1/4 cup of whipping cream if you prefer a cream soup, but this is so creamy by itself that it doesn't really need it. Season with salt and pepper to taste.
I haven't tried it with olive oil and veg broth, but I can imagine it would be just as yummy, if anyone needs a vegan version.
