My major is Communications and my current minor is Media Analysis. I have 13 classes left to register for until I graduate. Of those classes, 5 will be major courses, 2 will go toward my current minor, and 1 is a science elective I need.
That leaves me 5 classes to do whatever I want. I can take random electives in whatever subjects I choose, or I've considered adding a minor in Political Science, which requires exactly 5 classes. I'm interested in politics, but also like the idea of taking random classes.
When it comes to a career after college, I'm still undecided. There are so many options and I would love to work in a bunch of different areas (business, non profit, politics, marketing/advertising, public relations, etc).
So...opinions? 
ETA: Political Science is the only minor I would consider adding. It's the only one I'm intersted in that is offered online and I can't take classes on campus living overseas.

Why don't you start with a poli sci elective but don't commit to a minor until you have a class under your belt. My son just graduated with a double major and needed all his credits to do this almost. He did wish he had minored in one to be able to take some varied elective classes.

I majored in Journalism with a minor in Political Science. Having the additional minor will look better on your resume than just taking random classes. I say go for it.

I think that's tough to answer if you don't have a specific career in mind.
For all the jobs I've ever applied for, they didn't care WHAT I majored/minored in, just that I had a degree. I double majored in two areas I really was interested in/passionate about (one being COMPLETELY unrelated to my career), and I am glad I did.
However, I am sure that there are certain career where it is important you major in a related field.
