knightbff, yes, if you went to Tahoe, then it was Reno. Unless you also remember a very long, boring drive for 7-8 hours through the desert? lol Vegas is not at all close to northern Nevada. In the 90's, Vegas was branding itself as a "family friendly" place to visit. The past decade has been the "What happens in Vegas, stays in Vegas" rebrand. I think the latter brand is more accurate.
Since I work in Vegas (I have offices in northern and southern Nevada) I tend to avoid the strip like the plague. I can't speak to the triggerness of Zumanity, but it is my understanding it is the most naked and sexual of the Cirque shows. Love is supposed to be fantastic. I just saw Vegas, The Show. It was cute, but I'd see something better.
Leapyear, I think I heard the Grind was closing. Have you made it to Lola's? LOVE. I also want to hit Bachi burger and the other places on Diners, Drive ins and Dives, LOL

Another vote for Mystere. Seen it multiple times and could continue to go as often as I get to Vegas!
I've stayed at Bally's more than anywhere else, but it's a ways off the street. Flamingo was nice (in updated rooms) and is smaller. Walk directly out the door onto the sidewalk.
You say you're not gamblers, but if you sign up for their player cards and play even a little, you will likely get offers for a return visit with discount room offers, packages, meal deals, etc. Cards and offers are good at other casinos in the group, too. MGM is part of such a hotel/casino group. Their web site will tell all of them. I've been offered three free nights at various places or amazing reduced rates at their higher end partners. Enjoy!

Oh, and be sure to ask at check-in if they have any coupon books or vouchers to offer. They may send you some or give them to you without having to ask, but just keep that in mind. Bally's had two-for-one meals and show tickets, discounts on spa services, etc., a whole book they gave me. We used a number of them and saved quite a bit. Won't hurt to ask!
