I have to say I used to always make my roux, but once I was in a hurry and bought a jar of Savoie's.... There's no going back once you cross over to the dark side. It's too easy and it doesn't make the whole house smell like roux.
Ooooh Knights....where did we go wrong? Did we not hug you enough?

Come on, try it, you'll love it.
ETA: BH is now insisting that he likes the home made roux better. I swear I can't tell the difference but I will make it the next time I make gumbo just to see. Only because I love him though because I HATE stirring, and stirring, and stirring....forever.

Thank you Jpapa and Gabybaby for helping in KBFF's recovery. I have been telling her for years home made roux is so much better but she insists it tastes the same.
This was an intervention.

Jrazz, they look purty OK but the true test comes tonight when we eat one at work.
Empress, thank you.(and see above
)
KBFF, since it is my first attempt I went with a traditional cinnamon, sugar and raisin filling.(No pecans because a co-worker has a tree nut allergy
)
The final tally: 17 qts of red beans done, five batches of prawlins(one without pecans) done, two king cakes done and beignets mixed and ready to fry. Defiantely puttin' the gras in Mardi Gras, Cali style.
