We made a decadent chocolate cake early in the week. Chocolate cake, topped with brown sugar, them hot coffee poured over it. Spectacular. With yogurt and fruit, it becomes...breakfast.
A week off from The Grind. A TA missed copying a page of notes for student. Parents want to sue.
Tonight, come share our chili and corn bread. All homemade. Aferdinner coffee, chocolate raaspberry, in the carafe.

I feel off but plan to ride into the sunset waving goodbye and looking forward with hope and peace .Goodnight all have to get up for a social event at 7am.

Oh, there is a spa car. Next door is the yoga, massage and reiki car.
And this evening, baked chicken with cranberry-nut corn bread stuffing. Left over chocolates for dessert...

oh, I so need peace. The end is near. Final requests from my L for paperwork (notarized) and it could all be over soon.... Just a few more weeks. crossing fingers, throwing salt, knocking wood.
But I might settle for leftover chocolate.

OK. Here's the chocolate cake recipe I was waffling on about the other day. I made it a couple of weeks ago, turned out fabulous, really moist. I did have a picture but my daughter has lost the download cord for the camera!! Never mind, take it from me, it works.
Ingredients:
2 cups plain flour
3 quarters of a cup of cocoa powder
2 cups sugar (I used caster)
1 teaspoon baking powder
2 teaspoon baking soda (otherwise known as bicarbonate of soda)
Half teaspooon of salt
3 teaspoons coffee mixed in 3 quarters of a cup of boiling water.
1 cup of milk
1 cup of veg oil
2 eggs
1 teaspoon of vanilla essence.
Method
Mix all dry ingredients together in a large bowl.
Add oil, coffee (mixed with the boiling water), milk eggs and vanilla essence.
Beat well (mixture will be of a runny consistency)
Bake in 180 degree (celcius) oven or 350 degree (farenheit) or Gas Mark 4 - whichever applies to you!!!
Bake for three quarters to one hour. Test with skewer which should come out clean when cake is ready. Keep an eye on it if you have a fan-forced oven because you don't want it to overcook.

Looks like I am going to have to give this recipe a try. But it will have to wait until tomorrow. I'll grab a creamy candy for tonight as I soooo need a chocolate comfort fix right about now.

Ellejay, your cake recipe sounds a lot like one my parents made for years. It was called Ellen's Chocolate Cake. It could even be mixed right in the pan...
Here's our recipe - it's gluten-free. To use regular flour, add 2 tablespoons for each cup of gluten-free flour, and eliminate the xanthan gum. Or, use a chocolate cake recipe or mix that will fill an 8 to 9 inch square pan. We used a mix that had hot red pepper in it. Yum....
- 1 cup superfine brown rice flour
- 1/2 teaspoon xanthan gum
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 Tablespoons cocoa
- 2 tablespoons butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts
Mix together and spread in greased pan.
Sauce:
- 1 cup brown sugar
- 1/4 cup cocoa
- 1 3/4 cups cola OR coffee, heated to boiling
Combine sugar and cocoa; sprinkle over cake batter. Pour hot cola or coffee gently over batter.
Bake at 350 for 45 to 55 minutes.
We made a sea food stew yesterday. Will post a pic later...
Edumacation car closed today...First day back from vacation....NO HEAT.
Apparently, building lost power during wind storm on Saturday. Heat wasn't coming back on. So here I am at home, let out of school after a couple of hours. Thank goodness, as I was shivering.
Now it's time to make lunch, and do some school work. Got five weeks to do all my updated individual testing and write IEPs. Yipes.
So can't lose a day...

Happy weekend! Weird week. Sent home Monday due to no heat in the Edumacation Car, Tuesday at school, Wednesday out for dr appt, Thursday snow day, late in for another dr appt. Yikes!

This week I and my team (the Adonis who now has a concussion from too much contact sport + the Korean Valley Girl) will be deconstructing a tome entitled MAKING SEX, something something GENDER FROM THE GREEKS TO FREUD.
We are coming up with next week's seminar questions.
It's a LOT of gory anatomical illustrations of lady and man bits all splayed out, plus a lot of talk about said bits and Why The Vagina Really Matters.
Where do we start?

Happy Weekend to all!
Nothing big happening here. A few weeks ago, I implemented Family Movie Night on Fridays and tonight we will be settling down with Winnie the Pooh and Home Alone.
Tomorrow, 5 youth from my church are coming over to clean my house and babysit my kids for 2 hours, free! So I'll be packing as much me time as I can into those two hours. Yay!

The Adonis showed up with a plate of homemade pumpkin muffins.
He made them himself and they were *amazing*.
At the end of the discussion, we found out he aspires to be a stay at home dad.
