That's how my mom makes them. My grandma used to make them where they were crunchy on the outside, and chewy in the middle. There's definitely a difference between crunchy and crisp, and I think a large part of that has to do with the thickness of the cookie. Both styles have their merits.
The best ones were the ones my grandma used to make that were filled with a date mixture. They were always served with a hug, too, which was the best part.
