I have to say I used to always make my roux, but once I was in a hurry and bought a jar of Savoie's.... There's no going back once you cross over to the dark side. It's too easy and it doesn't make the whole house smell like roux.

ETA: BH is now insisting that he likes the home made roux better. I swear I can't tell the difference but I will make it the next time I make gumbo just to see. Only because I love him though because I HATE stirring, and stirring, and stirring....forever.

Take it on day at a time and one pot of Gumbo at a time KBFF. You can do this.

Caught Endymion on the webcam, second round of red beans are done along with pecan-free pralines for a friend with a nut allergy.

Jrazz, they look purty OK but the true test comes tonight when we eat one at work.

Empress, thank you.(and see above )

KBFF, since it is my first attempt I went with a traditional cinnamon, sugar and raisin filling.(No pecans because a co-worker has a tree nut allergy )

The final tally: 17 qts of red beans done, five batches of prawlins(one without pecans) done, two king cakes done and beignets mixed and ready to fry. Defiantely puttin' the gras in Mardi Gras, Cali style.

Canned roux should just be re-labelled "laziness".
