Sounds good! I'm glad you liked it. And yep.. the thinner the better IMO. I had a silken tofu /fresh peach cobbler of some sort at a BBQ once. I wish I knew the recipe because it was outstanding and I only knew it was tofu after I asked what was in it .

That peach/tofu cobbler sounds fantastic!

Now I'll be on the hunt for THAT recipe, lol!

WH#2 (SorryinSac)- Killed himself (May 2015) in our home 6 days after being served divorce docs.
XWH #1 - legally married 18yrs. 12+ OW (that I know of).

I have another tofu win!!

I love, love, LOVE yogurt, but regular dairy yogurt just kills my stomach.

I've tried a variety of store-bought yogurt (organic, soy, goats milk, etc).

I've made a ton of different homemade yogurts, experimenting with different ratios of dairy combined with almond milk/coconut milk etc...but no joy.

The one that makes my tummy (and my mouth) happy has silken tofu as the base!

2 blocks silken tofu

2 tsp vanilla extract

6 Tbsp lemon juice

2 Tbsp unsweetened almond (or coconut) milk

Sweetener to taste

Blend the ingredients together in a blender incubate at approx. 100 degrees F for 8 hours.

(I have a yogurt maker, so I transferred to 6 individual sized jars).

Store in an airtight container and refrigerate!

Sooo creamy, nice tanginess, and great flavor.

Yay!!!

ETA:

You can add berries or other fruit/flavors if you like. I left it plain so that I can add my own fruit later.
