I had the salad I didn't have time to make for lunch this morning - baby spinach with baby romaine, fajita seasoned turkey breast, monterey jack cheese, roma tomato, and avocado with a garlic herb dressing. Yummy!

Last night I fried up some chicken tenders and had rice and corn(I know double starch but we haven't been grocery shopping yet). Seems like I can never cook enough chicken tenders

I do, jrc!

If you like, I shall post the recipe here if you like.

I'm mainlining ***CHOCOLATE*** in any/all forms...well, except for that vile route.

Dreamlife...

I'd love the recipe... the last ones I made were dry and hard (I didn't use Sad's recipe like I probably should've)

I'm collecting meatball recipes now

I am stuck at work. So right now my dinner is a bag of chex muddy buddies and a frozen mocha from the gas station.

Have no idea what my other two Greens are having. Probably something better than what I had. Although the muddy buddies were pretty good.

I had PLANNED on making tacos. Mmmmm tacos . . .

Dreamy's Meat Ball recipe:

In a large mixing bowl: Place 1 chub of gr. chuck (small sz)

1-2 onions, chopped

2 TB. crushed/minced garlic

Big splash of *Lea & Perrins* Worcestershire sauce (must be L&P brand! )

3-4 eggs

a few slices of stale French bread torn up

1/2 C. Matzo meal

3/4 C. Progresso Italian bread crumbs

5 grinds of Tellicherry black pepper

1 tsp. Italian herbs (not salt)

In a heavy skillet, drizzle xtra virgin olive oil and heat.

Mix ingredients well and form into balls.

Place in heated pan and cover half of pan w/ a lid (splatters)

Turn around and brown well.

YUMMMMY

This is a basic recipe I use.

In the past, I have experimented w/ squirts of ketchup, mustard, plain breadcrumbs (for Albondigas/Spanish meat ball stew), chopped fresh cilantro, crushed red pepper, dark brown sugar to caramelize in pan juices, and crumbled blu cheese.

Think of your fave meat loaf shaped into balls.

Can be tossed into pasta sauce w/ thick meaty slices of vari-colored bell peppers and eaten w/ bread, pasta, rice.

Enjoy!
