Chicken and Dumplings. Absolutely NO veggies in this one!

> 3 large frozen chicken breasts or 4 medium.

> 2 cans of Cream of Chicken condensed soup

> 2 tablespoons butter

> Chicken broth/stock

> Pepper and garlic powder to taste (optional)

> 1 can/tube of uncooked biscuits (I like the butter flavor)

Place the frozen chicken breasts in bottom of crockpot. Add soup, butter and pepper. Then add enough chicken broth to cover chicken. If you have some white wine laying around, slosh some in there too! Season with pepper and garlic powder if you wish. Do not add any extra salt as the chicken broth/stock has enough sodium.

Cook on low for 5 1/2 hours.

Take out the biscuits and cut each biscuit into 6 peices. Add them to crock pot and press them down with spoon to submerge them in liquid. Stir every 20 minutes for another hour on low. The flour in the biscuits will thicken up sauce. If it is too thick you can add water or more chicken stock.

(Before adding biscuits, use spoon to cut each chicken breast into half. This will help with the shredding process)

The dish doesn't look pretty when it is done (all beige!) but it is so, so good!

I absolutely love the pot roast kits that they sell at Aldi, and Walmart. You put it all in with some water, and wine, and walk away. There are veggies, if potatoes, and onions count, but it also gives great flavor.

I also like to do the Turkey breast with a bottle of white wine. Put it in at bedtime, and let it go until you get home from work. OMG best turkey ever.
