Leftover Turkey and Ham Recipes and Ideas

So, now that everyone has had their turkey fill, give me some new ideas for the leftovers.
I'll go first. I make turkey pozole verde (see the other posts for a description of the process), turkey enchiladas with móle sauce, and sometimes turkey tamales. Of course I also do the turkey sandwiches and turkey chili too.
As for ham, I stick with split pea soup because I live it so much. I usually dont have a lot of ham leftover, so its just enough for the soup.
