So, just trying to find a secondary part-time job to make some much needed income and keep things afloat. Just wondering if it is a good or bad idea to reference in my cover letter that I am a single dad looking for a stable secondary income or if I should omit it entirely?

I wouldn't offer that info in a cover letter. IMO a potential employer might think that you'll stay long enough to get a little financial boost, then leave when he's invested time and effort into training you.

No. That type of information does not belong in a cover letter. If you're asked a direct question in interview, then you can say it.

No, and they shouldn't ask you about that in an interview either. Isn't that considered discrimination if they base a hiring decision on stuff like marital status?

Yes, familial status is a protected class. You cannot be discriminated against because you have children, regardless of your marital status.
Cover letters should emphasize your qualifications in relation to the job requirements (exact relation is best), your strong desire for the position and where you can be reached.
ETA: ALWAYS follow-up about a week later on your application. Be the squeaky wheel!

Thanks everyone for your feedback on this, clearly I shouldn't add that to my letter. That's the easy part....now the tough part of finding a job outside my normal 8:30-4:30 job, lol....

After using this advice, I managed to get an interview for a night auditor position at one of the local hotels. 2 shifts a week working 11PM-7AM, so figure I can manage that for the benefit of the boys. About a 1/4 of the pay of my regular job, but at this point, I need the cashola....
