This is the second time that I've had a sandwich with roasted veggies (eggplant, red pepper, and zuchinni) and felt sick after reheating and eating the leftovers. They were from totally different places. The only thing I could find was about eggplant making you nauseous if not cooked correctly. But both times I felt fine after eating the sandwich when I ate it at the restaurant. Anyone ever experience this? Or think it's the eggplant?

What are the chances there's MSG in the sandwich? MSG + microwave is bad news.

Eggplant can be difficult to digest, it can get rubbery too when reheated. Meaning your gut has to work harder to break it down or pass it through. I would recommend taking the eggplant off in the future.

The first time it happened the sandwich was from an Italian place. This time it was from a fancy seafood place. So I'm not sure how likely either place would use MSG.
Both times it hit me an hour or so later and I got really nauseous with stomach and back pains.

Where the leftovers properly refrigerated? How long was it between when you got the food and it was placed in the refrigerator? How old were the leftovers when you ate them?
I generally won't eat leftovers from a restaurant after a day. Or if too much time passed between getting the food and placing it in the fridge. I don't know the food safety practices at the restaurant so I don't take any chances.

The first time the restaurant was close by. So it came home and went right into the fridge. This time it traveled further (stopped to eat before driving home from vacation) but was inside my truck by the vents and AC. The trip is a little less than 2 hours.
But I guess it helped in a way because before I left for vacation I hit that milestone weight loss. Then I went down the shore and was gluttonous.
Only gained 2.2 pounds on vacation. And I actually exercised when I was there. I ran on vacation...I must be sick.

This might be a silly question, but do you still have your gallbladder? This sorta sounds like it could be a gallbladder attack.
I hope it's just the eggplant.

Yep. Still got it. I know my mom has had issues with hers (now I can't remember if she had it removed). Are gallbladder problems genetic? However, I can't really say I've had that issue many other times. I know I can say at least a couple which I always chalked up to food poisoning. It was just recently enough that I had the problem with the same vegetables the first time that made me think it was the food.

Eggplant absorbs a lot of oil so maybe it was a gb issue.

Yah pay attention to what you are eating TCD, if you are having belly pain after eating anything that has a fair amount of grease or oil (including olive) then you may be dealing with a gall bladder issue. It is not uncommon for it to act up when you have had a recent weight loss, and under stress.
The hallmark person fits the 4 F's, that's what they taught in nursing school a hundred years ago anyway.

If you have 2 or more and belly pain consider the gall bladder, also with it going to your back is an indication.
I know youre a fairly healthy eater, but if your up for testing the theory go get yourself some good old french fries from a fast food joint, and see how it goes, if you have the pain, then make an appt to see your Dr.

Oil oxidizes (gets rancid) very quickly. 2 hours in a car before refrigeration is WAAAAY too long, IMO.
Fancy restaurant or no, I'd bet my bottom dollar that there's MSG. I'm not sensitive to it, but many are.
