You now have me curious...let's get a little personal.
Did you smell the old lines when you pulled them? OK, you know you did...
How did they smell?
And did you smell the new lines? Any strange odors??

I'm still thinking vent lines, for sewer gas smell coming back, especially since it's upstairs.
Try sink you're getting odors from that you didn't replace lines on, pour a gallon of water from another source, not that faucet at that sink, and see if you still get an odor. If you do, that eliminates the supply lines as a cause.

And no, old supply line doesn't smell.

Yes, dump some non smelly water into the sink and stick you nose around. The idea is to verify or eliminate the vent as a source. When you dump water it will displace any air trapped in the vent system, or overflow part of the sink. If it is the vent, you should get a whiff of sewer gas.
Vent piping actually sucks a little air in, not out. Is the smell coming from the water, or the fixture?
How old is the water heater? Maybe the anode is bad and letting a chemical reaction happen in the water that is going to the high point in the system, (upstairs). Seems strange it would just start happening now though.
Just another reason I hate plumbing!

Okay, tried the water dump, no smells. BTW, there is NO overflow in these sinks, don't know why.
Newish hot water heater, 3years, and it definitely isn't the hot water anyway.
Right now, after replacing just the supply lines, there is no smell. But the old supply lines didn't smell. We'll see what the next few months bring.
I'm beginning to hate plumbing,too. Do I mention the outside manifold for the hose broke in the midst of all this? Oy Gevalt!
