Homemade (low carb) ginger chicken "noodle" soup!
The "noodles" are made of julienned daikon and there's yummy fresh ginger, carrots, and veggies.
Me - late 40s

WH#2 (SorryinSac)- Killed himself (May 2015) in our home 6 days after being served divorce docs.
XWH #1 - legally married 18yrs. 12+ OW (that I know of).

Sunday night I made garlic-honey chicken it was amazing. Last night I made a Meatloaf Cordon Bleu. I over cooked the meat a bit, but my fiance still said it was good!

Tonight, we get to enjoy chicken Paprikash & noodles with low cal chocolate yogurt/oat muffins for desert.
The other day, Montreal spice crusted roast loin of pork with oven roasted potato wedges.
Being unemployed does let me have the time to indulge in new recipe tryouts!

HUFI, I'm with the twin brother. I like it DONE. Crusty might be a little too far though.

It rained all day here- not so sunny. I got ham soup out of the freezer (thank you Honey baked leftovers!) and made parmesean crisps to go with the salad.

I made a big ole' stout meatloaf, but I used half italian ground pork n half ground beef, added some mozzarella into the mix, some fresh parsley and oregano, pizza sauce on top and it was moist, awesome and filling. Yay cold weather! In the spirit of full disclosure, however, dinner last night was homemade chex mix. I love being single...

I made a chuck roast... Used can of mushroom soup, red wine and beef broth with a little Worcestershire. Browned the roast... cooked up the onions and garlic in the meat drippings... Then poured the mushroom soup mixture over it all and put it in the oven on 350° for 3.5 hours.... So yummy
Served over egg noodles
w/ broccoli and rolls.
It was very much delicious.

I think tonight's dinner will be individual meatloaf (use my muffin pan to make meat muffins) with my secret sauce on top. Using the pan helps them cook a little faster and there's nothing to slice.
Not sure on sides...it depends on what sounds good when I open the pantry door.

Tonight I am making spaghetti squash as spaghetti with homemade marinara sauce. First time - we'll see what everyone thinks!
ETA: It was awesome! A great alternative to pasta. H & I both liked it. DD22 said the texture was *off* for her.
Definitely will do this again - can't believe I am 52yo and just had spaghetti squash for the first time.

DD turned me on to spaghetti squash. Not sure what she does to it, but it's always delicious.
Tonight I had a veggie burger with sauteed onions, zucchini and mushrooms on top and as a side.
I love veggie burgers.
DS, you are forever in my heart. Thank you for sharing your beautiful spirit with me. I will always try to live by the example you have set. I love you and miss you every day and am sorry you had to go so soon, it just doesn't seem fair.

Do you make your own veggie burgers or buy them premade?
I've only ever tried the Garden Burgers back in the mid-90s and I wasn't enthralled....
I'm curious if they're any better than they used to be.
