NIK - you should try pouring those junior mints onto your popcorn and eating them together.
We're having bacon wrapped, maple brined pork roast, with gingered carrots and mashed potatoes. I didn't plan a dessert because I figure the 5 of us will still be trying to eat the 9 different varieties of candy I've been asked to make.

Currently thinking; ham, au gratin potatoes, and either steamed broccoli or roasted sprouts.
Not sure on dessert, I went kind of overboard for Thanksgiving (5 pies). Maybe something simple like cupcakes or cookies.

musiclovingmom and crescita- your menus sound delicious too! I'm not too sure about the popcorn/jr mints combo...

I know it sounds gross. When I first read about it in a 'Life's Little Instruction Book' years ago, I was skeptical too. My dad still doesn't like it. But my mom, sister and I are hooked. I'll have jr mints with popcorn while I watch 'A Christmas Carol' on Christmas Eve.

We didn't want turkey again... the bunch asked for chicken enchiladas, so chicken enchiladas it is!
And pies. We have to have pumpkin and chocolate cream pies.

We do Christmas Eve dinner here.
Well I wanted ham but it cost too much
and since we will have only 2-3 people I got one of those football shaped turkey breast things. We have corn, and cranberry orange relish. Maybe green beans. Pumpkin rolls if I remember to make them. No idea really. I guess it depends on if it is 2 or 3 to dinner.
Dd's birthday is Monday so we have birthday cake for dessert every Christmas eve. Tradition.

Turkey (DS gets one from his work)
mashed potatoes
gravy
veggies to be named later
dinner rolls
dessert will be some of the cookies we're making - buckeyes, fudge, chocolate dipped shortbread, Mexican wedding cookies, cream wafers.

Enchiladas sound delicious!!
Sadcat- happy birthday to your DD!!! My DS was born 3 days after Christmas so this time of year is tough for us financially too. We usually push his birthday party back to Jan.
Kernel- sounds good. I love buckeyes but I'm a firm believer that you can't go wrong with chocolate and peanut butter together.
