Just had to contribute here and probably kill the the thread.

I have 2 ways with sweet potatoes - neither has added sugar.

First I cut them up like potato wedges and then toss in a bag with olive oil and curry powder. Bake on a tray at about 350 for about 20 minutes and stir them up once.

The other recipe is bake 4 medium size sweet potatoes in the oven about 40 mins at 350.

Meanwhile, mix together 1TB honey, 2 TB orange juice concentrate, 3/4 cup pineapple chunks - some of them mashed up, (or crushed pineapple) with some of the juice. Add a little salt if desired.

When the potatoes have cooled a bit, skin them and chop them up. Pour into the other ingredients and fold together.

Transfer to a greased casserole dish and bake for 35 minutes.

I cannot stand boiled sweet potatoes. If they're boiled they're going in the trash. I went to a friends for Thanksgiving dinner, boiled, too much sugar, and marshmallows. She put some on my to go plate when I told her I don't like it boiled and oversugared. Went home and promptly tossed in the trash.

Baked sweet potatoes are the way to go. Little to no sugar, maybe a hint of cinnamon and some butter. I've had it with nuts too. So long as the sugar is low, I'll eat it with or without nuts. No flour. I'd use less than half the amount of sugar that you used, or even none at all and a light drizzle with maple syrup on top after it's hot.

I like sweet potato pie with a little bit more sugar and some good quality eggnog with lots of liquor in it. I also like sweet potato fries, and savory baked sweet potatoes.

I've never tried maple whipped cream but sounds really good so I might try it this weekend.

Baked in jackets in oven makes taste much more intense. I never boil my potatoes.

I think this is my first post ever in this forum. Here is the reason- I have a killer Sweet Potato recipe. It sounds weird, but if you try it, I swear it will be your new favorite.

2 jalopenos or serrano peppers diced and marinated in enough lime juice to cover and a tablespoon of sugar mixed in. You just throw that together right before you do the rest, and don't worry, because of the marinade the peppers will not be hot.

Then you slice some sweetpotatos about 1/4 of an inch thick and toss it in a little olive oil and salt and pepper. Roast in the oven slightly overlapping on a cookie sheet for about 25 minutes at 350 degrees.

Take them out and add Monterey jack cheese and the marinated peppers (drained). Put back in the oven long enough for cheese to melt.

Even my pickiest eaters LOVE this, and would also never eat anything spicy, it's not spicy at all I promise.
