Sweet Potatoes

Since I didn't want to get back into that train wreck of a thread in General...

I just want to say that those of you who don't like sweet potatoes are doing it wrong.

Try with a pound of butter, a few cups of sugar (brown and white), and a pile of pecans...I have yet to find a person who said they didn't like sweet potatoes (adult or child), not ask for seconds.

Sweet Potato Casserole

6-8 cups of chopped and boiled sweet potatoes

1 cup of sugar

2 eggs

1/2 cup of milk

1/2 cup of butter

1 tsp vanilla

Mix/mash all of the above. Put in a baking dish (potato mixture ~1 1/2 - 2" thick). Bake in oven @ 350 for ~ 45 min.

Topping

2 cups brown sugar

2/3 cups flour

2/3 cups butter

1 cup of chopped pecans

Mix these (have the butter at room temp to make it easier). Pat out mixture (or roll it with a rolling pin) to ~1/2". Put on top of above casserole after baking at 45 min. Heat @ 350 for ~15 min.

Last step: Go into diabetic coma.

Yes! I love sweet potatoes, I love marshmallows, but I hate them together. I prefer mine glazed.

I parboil the potatoes, then peel and slice. Add to a pan with roughly 2:1 parts brown sugar and butter (I eyeball this so no measurements, but enough that it's basically a thick sauce/syrup once the brown sugar dissolves), and simmer until done, basting/flipping periodically.

Marshmallows are for s'mores and cocoa.

Oooo, Oooo! Thank you for NOT mentioning cinnamon!! I really can't understand why every time we taste any commercially-prepared sweet potatoes (like at the local Thanksgiving Buffet) we discover somebody had to screw up the dish by adding cinnamon...just wipes out the rest of the rich flavors, and all I can taste is that one spice. No thanks!

I agree with ChewedMeUp about sweet potatoes and marshmallows. The foamy white topping of a "sweet potato casserole" has become way overdone. (Who started these trends?)

LOL diabetic coma, indeed, though! I wonder how much less sugar one could get away with, in this recipe? How about maple syrup for the pecans?

One year, I tried a New Zealand Kumara recipe with peeled, sliced sweet potatoes simply layered and baked in orange juice. Never knew how attractive their flesh can be, as they come out looking like orange snowflakes!

The best way to have a sweet potato is in nuked in the skin, and popped open w/ some butter on it.

If you like the cinnamon sugar thing you can do that, but it's not needed. They are delicious enough on their own.

I also like to cube them up raw, put on a baking sheet w/ Olive oil, and some coarse salt, and bake at 450 until they start to carmelize a bit, and then drizzle some honey over them. YUM!!!!

I'm with Tushnurse! Except I like mine baked. Same result in the end. Just open it up like a baked potato and add butter and salt. It is delicious and good for you.

As a kid I loved the typical sweet potato casserole with the sugar and marshmallows. It's way too sweet for me now.

I generally think adding sugar to sweet potatoes is like thinning your Whiskey with Vodka.

I peel and quarter the potato, boil for 10-15 minutes and then mash along with butter or sour cream. Add Muscat or cinnamon or maybe a dash of rock-salt.

I love sweet potatoes, especially a sweet potato casserole. Some people use canned yams instead of sweet potatoes and that just won't do. And yes, I love the toasted marshmallow topping as well.

This is how my family has them (Thanksgiving and Christmas). Baked wrapped in parchment paper and tinfoil.

I'm not as big of a fan but my parents act like it's candy.

I love sweet potatoes all different ways - glazed, baked, nuked, etc.

But keep the marshmallows off. Way too sweet and just gross to me.

Sorry, you haven't technically "met" me, a sweet potato hater. I don't like the smell, the texture, the taste. To me they are as bad as yogurt, mayonnaise and mushrooms (shudder)

I'm glad you all like them. I prefer to take my massive calorie rush in ice cream.

I only make them at Thanksgiving and Christmas, so twice a year shouldn't kill me.

Funny this kind of sounds like me. I warmed up to yogurt because of Greek Yogurt (Fage brand), and in the last few years finally to mushrooms. Mayonnaise is still horrible though

My people! My sweet potato loving people!

I'm fond of them cut into slices, put in a layer onto a baking tray next to gold potatoes, red and/or purple potatoes, onions, carrots, and beets, drizzled in a touch of olive oil and lavender salt, and baked. Something about baking them all on the same tray makes them taste extra good.

I'm totally going to try out some of these other recipes here!

This year my mom tried something new with the Thanksgiving leftovers: Turkey sandwiches (thick white breast meat) with the (baked) sweet potatoes smeared on the bread like mayo.

I haven't tried them, but I'm hearing good things.

Nobody mentioned this yet. If you want to stay a little bit healthy, you can go for a spicy sweet potato recipe.

I cut them into slices, like a thinner version of hand cut fries, and lay them on parchment paper on a baking sheet. Drizzle with olive oil and then coat with a mix of of garlic powder, black pepper, and I use a Cajun seasoning mix (you can use chili powder and cayenne pepper if you like it hot). Then bake until just turning crispy on the edges. Yummy!

Sweet potato cheesecake...the ultimate. With a toasted pecan crust. I once had 6 guys wait in the restaurant where I was a chef for an hour and a half for my signature sweet potato cheesecake to cool. Served with a generous scoop of fluffy maple whipped cream.
